Trail Bologna

 

2-3 TBS. Coarse Ground Black Pepper

2-3 TBS. Garlic Powder

2-3 TBS. Onion Powder

3 TBS. Worcestershire Sauce

3 TBS. Liquid Smoke

5 TBS. Morton's Tender Quick (curing salt)

4-5 TBS Mustard Seed

1/4 cup warm water

5# MEAT

Mix thoroughly. Form into logs. Wrap in wax paper and

place in refrigerator for 3 days to 1 week.

Remove wax paper, place on oven rack.

Bake @ 200 degrees for 2 Hrs. or 150 degrees for 6 Hrs.

 Note: I cooked till internal temp. was 160 Kicked oven up to 300 for about 20 min. to reach the 160 after the 2 hrs. @ 200 degress.
